A talk with Pino Fumarola

One of my best coffee masters (Prof: Luigi Odello) used to say that ‘quality begins where there are no defects’. As I have always said, Arabica means a lot but it does not mean everything. First of all, one really has to be able to select a quality product. It would be better if it is cultivated at altitudes above a thousand metres and worked without or with as little pesticides as possible: in this way the soil produces less and better! We must also be prepared to properly remunerate the people who spend their lives in the fields to provide us with good raw material. This is a very important first step that could be thwarted if every process from seedling to cup is not carried out correctly. Commercially, saying that we use a Santos Arabica from Brazil or a Colombia Supremo certainly has an important effect, but not on our conscience! Santos, in fact, is only the name of the port where the largest amount of Brazilian coffee for export flows. Furthermore, in the case of Brazil, traceability by indicating the name of the producing company is of little use. There are companies here that are so large that they alone produce more than all the coffee produced in Bolivia. That is why we try to buy Brazilian coffee from the Bahia region. With the establishment of the Cup of Excellence, from 2009 to 2016, this location produced 5 of only 10 award-winning coffees in the whole of Brazil. Each nation, however, has its own characteristics: for Colombia, for example, boasting of using Supremo coffee is not necessarily a guarantee of quality. Here, the term Supremo only stands to differentiate the size of the beans as desired by the FNC (Federacion Nacional Cafeteros) which, established in 1927 as a non-profit organisation, created ‘Supremo e Excelso’. Unfortunately, these only classify coffee according to bean size and have no relation to quality. Only by purchasing coffee with certain traceability is it possible to obtain incredibly pleasant products. There are about 14 production regions in Colombia: Quindio, Risalda, Antioquia, Cundinamarca, Sierra Nevada, Tolima, Valle del Cauca, Santander, Norte de Santander. Among the best are Huila and Narino at 1,500 – 2,300 metres, Caldas at 1,300 – 1,800 metres. The cultivation heights vary between 1,300 and 2,300mt and the cultivated species are:  Tipyca, Caturra and Castillo.

But does a consumer have to take a degree course first to drink good coffee? Absolutely not! However, it is necessary to choose a brand you can trust. That is why we at Morola, in addition to creating a good relationship with our customers, are very keen on a good reputation among our suppliers. My trips to production countries and long-term agreements with manufacturers have precisely the purpose of guaranteeing a promise of quality made to our current and potential customers.

A coffee of excellence

The Morola Limited Edition coffee pod was the 2014 and 2016 winner of the prestigious Gold Medal awarded by the International Institute of Coffee Tasters (IIAC).

Contents: Arabicas from: Costa Rica, Brazil, Ethiopia, Honduras and Colombia. Robusta from: India and Indonesia

Format: single 7.5 g filter paper in a food-grade envelope (triple laminated) sealed with nitrogen to allow the blend to best preserve all its organoleptic characteristics, expiring two years after the production date indicated on the pod.

Use: Espresso machines with filter paper pods with standard 44mm or in case of emergency also with the Moka for Morola pods.
